With over 3 pounds per barrel of sticky Simcoe, Centennial, and Cascade hops, completed by two separate dry hop additions, this beer is a hop-lover's dream. Executive Chef Michael Ludlow and Brewer Spencer Tielkemeier have worked together to prepare a beautiful five-course menu including: Course 1: -Texas Quail stuffed with local blueberries and orange peel -Paired with Uncle Billy's Agave Wit Course 2: -Rabbit Consommé made with locally sourced rabbit -Paired with Uncle Billy's Axe Handle Pale Ale Course 3: -Arugula and frisée salad -Paired with Uncle Billy's Bottle Rocket Lager Course 4: -Prickly pear-glazed Texas wild boar loin chop served with pine nut polenta made with Bottle Rocket Lager -Paired with Uncle Billy's Vienna Lager Course 5: -Rich vanilla bean sorbet made with local duck eggs -Paired with CASK Uncle Billy's Lake Monster Imperial Stout This will be the first-ever appearance of this brand new beer! Brewed with English brown malt, black malt, and roasted barley and a hefty addition of Texas brown sugar, this rich, complex ale has an aggressive roasted malt profile and a smooth mouthfeel with notes of coffee, molasses, vanilla , and dark fruit.
